The OLEA project proposes the development of an innovative electronic platform using low-cost, disposable sensors to measure the dielectric and physicochemical properties of olive oil.
The collected data will be processed and made available in real time, allowing immediate adjustments to the production process.
In the medium term, the project will also support the creation of structured databases and artificial intelligence (AI) algorithms to identify links between olive oil quality and key influencing factors.
